Plumpton Goes Green Recipe Collection
Vietnamese salad
- 3 turnips or kohl rabi – grated
- 2 carrots – grated
- Small bunch perilla or mint – chopped
- Small bunch coriander – chopped
For the sauce
- 60ml rice/white wine vinegar
- 1 tbs lime juice
- 3 tbs sugar
- Pinch of salt
Garnish
- Spring onions – chopped
- Roasted peanuts
Toss together the turnips, carrots and the herbs. Add sauce to taste, and garnish with the spring onions and peanuts.
