Plumpton Goes Green Recipe Collection

Turnips braised with soy sauce and sugar

2 tbps vegetable oil
2 lb (900g) turnips, peeled and cut into cubes
8 fl oz (250ml) vegetable stock
2 tbps tamari soy sauce
1 tbps caster sugar

Heat the oil in a large pan and when hot, put in the turnips. Stir and fry until the turnips are lightly browned on all sides, about 5 minutes. Add the stock, soy sauce and sugar. Bring to the boil, cover, turn the heat low and simmer gently for 15 minutes or until the turnips are tender, stirring occasionally. Serves 4-6.
